Our beef is sourced from LaPlatte River Angus Farm, Shelburne VT, Vermont Family Farm, Enosburg Falls, VT, and Curtain Farm, Cassville, NY. Raised naturally on grass and finished on grain, our beef exceeds USDA “Prime” quality. Master Butcher Frank Pace dry ages our beef in house for at least 21 days to impart unique flavor and tenderness. All steaks are hand cut daily and grilled over hardwood. Dry aged steaks are best prepared rare or medium rare. Preparations past medium will compromise tenderness and flavor.
